Choosing the right sausage casing depends on three main variables: what type of sausage you are making, your cooking method, and your production setup.
To make the right choice, you can follow this step-by-step selection process.
1. Determine Your Sausage Type and Eating Experience
The first filter is deciding whether you need the casing to be edible or non-edible.
- Fresh & Pan-Fried (Bratwurst, Breakfast Links): You need thin, tender, edible casings that cook alongside the meat.
- Choices: Sheep natural casings (for thin links), Hog natural casings (for standard brats), or Edible collagen.
- Smoked & Cured (Frankfurters, Hot Dogs): You need high smoke permeability so the flavor penatrates the meat.
- Choices: Sheep natural casings or thin edible collagen. (Cellulose is also used commercially but is peeled off after cooking).
- Large, Dried, or Peeled (Salami, Summer Sausage, Pepperoni): You need heavy-duty, structural casings that can support hanging weight and shrink as the meat dries. These are non-edible and peeled away before eating.
- Choices: Beef middles/bungs, Inedible collagen, Fibrous casings, or Plastic.
2. Match the Casing to the Required Caliber (Diameter)
Sausages are categorized by their millimeter diameter (caliber). Match your target sausage style to the correct sizing group:
Small Caliber (15mm – 26mm)
Ideal for breakfast links, snack sticks, and cabanossi.
- Best choice: Sheep casings (tenderest natural snap) or Collagen snack stick casings (unmatched speed and uniform straightness).
Medium Caliber (28mm – 40mm)
The standard size for traditional dinner sausages like Italian sausage, bratwurst, and frankfurters.
- Best choice: Hog casings (the classic, forgiving choice for home and craft producers) or Medium edible collagen (for perfect portion control in retail packs).
Large Caliber (40mm – 100mm+)
Used for slicing sausages like summer sausage, bologna, salami, and mortadella.
- Best choice: Fibrous casings (extremely tough wood-cellulose blend), Inedible collagen, or Beef natural casings (middles or bungs).
3. Assess Your Production Setup
Your equipment and volume dictate whether you should choose natural or manufactured casings.
Is production high-speed/automated?
├── YES ──> Choose COLLAGEN or FIBROUS (Ready-to-use, zero prep, perfect caliber)
└── NO ──> Choose NATURAL CASINGS (Hog/Sheep) (Forgiving to stretch, classic artisan look)
- Choose Natural Casings if: You are small-scale, crafting artisanal products, or prioritizing a traditional curved look and smoke profile. They are elastic, making them easier to twist by hand without tearing.
- Choose Collagen or Cellulose if: You use automated stuffing machines, require exact portion weights for commercial retail packaging, or want to skip the washing, soaking, and rinsing prep steps entirely.
Quick Reference Checklist
| If you are making… | …use this specific casing | Why? |
| Snack Sticks / Slim Jims | 15mm–19mm Edible Collagen | Stays perfectly straight, won’t twist out of shape, handles high heat. |
| Breakfast Links | 20mm–24mm Sheep Casing | Offers the most delicate, tender bite for tiny links. |
| Bratwurst / Italian Sausage | 32mm–35mm Hog Casing | Strong, classic look, excellent frying durability, easy to twist. |
| Summer Sausage / Salami | 50mm–65mm Fibrous Casing | High strength for hanging, peels off perfectly cleanly. |
| Chub / Liverwurst (Unsmoked) | Moisture-Proof Plastic Casing | Prevents weight loss/evaporation, zero water penetration during boiling. |
